Grilled octopus on the plancha
Tentacle seared to order on the plancha, olive oil, smoked paprika and fleur de sel.

Seafood board to share
Carpaccio of the day, squid and capers, lemon. To pick at as the meal begins.

Clams with garlic and parsley
Flash-sautéed with garlic, flat-leaf parsley and olive oil. Served piping hot in their juices.

John Dory grilled whole
Caught in the Mediterranean, grilled whole on the bone, scattered with fresh herbs and a drizzle of olive oil.

Bouzigues oysters on slate
Opened to order, served on ice with shallot mignonette and lemon.

Seafood platter
Spiny lobster, oysters and shellfish, put together from the day's catch. To order in advance.
Three markets,
one single standard.
Every morning, Pierre walks the fish markets before we open. He picks the fish one by one — Mediterranean first, small-boat always, never sight unseen. In good years, we fill the counter. In lean ones, we put out less. But we never cut corners.
France's leading Mediterranean fishing port. Sea bass, gilthead bream, red mullet, sole. Our anchor point.
Small-boat fleet and coastal trawlers. Mackerel, bonito, anchovies when the season allows. A market on a human scale.
For the rarer catches — eel, skate, dentex. The market where we find what's missing elsewhere.
